Monday night was hotdogs and chips at the local skating rink. It was the school's family night and we had kickboxing, Tae Kwondo, and one son had basketball practice all between 5 and 7 .... so, to say the least it was a CRAZY evening!

Tuesday - I made stir fry with stew meat, frozen Asian veggies, and asian rice. My youngest is munching it like crazy right now, so it must be good.

Wednesday - chili that will cook in the crockpot all day.

Thursday - Pork chops, mashed potatoes, and corn (a family favorite)

Friday - spaghetti (oldest son has a BB game on Sat morning, so getting him the carbs).

Now that I am a WAHM I am cooking so much more and really enjoying it.

One of my kids favorite snacks are mini muffins. I mix up a batch and then pour it into mini muffin tins using the mini paperliners. I even send them to school for a snack!
