Eating the right foods is essential to good health. Too much fat and sugar in the diet can cause a laundry list of health problems, not to mention that it makes it difficult to maintain a healthy weight. We also need to get in all of the nutrients that are essential to good health. And we must watch out for meats that contain antibiotics and hormones and produce that contains pesticides or has been genetically modified.

Unfortunately, eating healthy isn’t always as easy as it sounds. Sometimes we just don’t have the time to make or seek out healthy meals and end up eating convenience foods or something from the closest burger joint. And for those of us who make it a priority to eat balanced meals, cost is often prohibitive. Organic meats and produce aren’t cheap, and health food restaurants can be pricey, too.

As impossible as it may sound, we can eat healthy without putting a big dent in the budget. Here are some tips:

* Grow your own fruits and vegetables. Most climates are conducive to growing a variety of edible plants. All you’ll need is some seeds, some very inexpensive equipment, and a place to grow your plants. A pack of seeds that costs less than a dollar can yield enough food to last quite a while.

* Can or freeze some fruits and veggies for winter. Chances are you’ll have some left over from the growing season, so save them for a few months down the road. Older family members can teach you the techniques you need to know, or you can find information online or at the library.

* Buy local as much as possible. Farmer’s markets offer fresh food that is locally grown, and the prices are almost always lower than organic foods from other sources. Farmers who only sell locally are less likely to have their offerings certified as organic, but you can ask them about their use of such things as pesticides, antibiotics and hormone treatments face-to-face.

* Buy staples such as flour and rice in bulk. In most cases, the bigger the package, the better the deal. If you’re not sure, divide the price by the number of ounces for each package and buy the one with the lowest price per ounce.

* Stock up on meats when they’re on sale. You can store them in the freezer for several months to a year depending on the type of meat. They will be less prone to freezer burn if you wrap them in aluminum foil or freezer wrap in addition to the packaging they are sold in.

* Eat out as little as possible. Most restaurants have few or no truly healthy options on their menus, and the ones that do are rarely cheap. Preparing your own meals most of the time gives you more control over what you’re eating and saves you money.

Eating healthy doesn’t have to cost a fortune. By growing some of our own food, buying local and watching for sales, we can eat well without going broke.

With today the first day of Spring I wanted to share this yummy recipe easy to make and a great way to bring some color to the dinner table
Ingredients:

14 oz of small shell pasta

1 lb asparagus

2 carrots, peeled

1 small onion, diced

1 celery stalk, cut into thin strips

2 tbsp unsalted butter

2 tbsp olive oil

Salt and Pepper

Parmesan cheese

Method:

Boil pasta according to packet instructions. Set aside.

Prepare asparagus by cutting the tough ends off. Half the asparagus widthwise, then quarter them and cut them into thin strips. Use a vegetable peeler and slice carrot into strips as well. Cut the celery into very fine strips.

In a saucepan, heat oil, then add onion and sauté until soft. Add the rest of the vegetables, salt and pepper and stir over medium heat for about 7 to 8 minutes.

Combine vegetables with cooked pasta, season to taste and serve immediately with lots of delicious parmesan cheese.

Here is a fun bread that you can make with your little ones or big ones if you have teens they also love to make this, Yes even boys. I have found that baking helps open both deep and silly conversations with them. To me it is worth the mess they may make. I love the bonding that baking brings with the kids. They grow up so fast and we only have a short time to bond and create these little memories with them. I say take advantage of every chance you can. So this week I am going to bake this Holiday Cinnamon Braid with my son Alin since I have been making candy with the other three its time to bake with him.

Here is the yummy recipe so you can try it too

What You Need:

2 (1/4 oz) pkgs. active dry yeast

1 C warm water

1/3 C butter at room temperature

1/4 C sugar

1 t salt

2 eggs

5 C flour

1 egg yolk

1 t cold water

1/4 t cinnamon

How to Make It:

Dump the packages of yeast into a mixing bowl.
Add the warm water (110 degrees) to the yeast and stir until completely dissolved.
Place the butter, sugar and salt into the yeast mixture.
Break the eggs into the mixture and add 3 C of flour.
Use an electric mixer and beat on medium speed for 3 minutes.
Add 1 C of the remaining flour and stir until a soft dough forms.
The remaining flour may be added as necessary to form the dough.
Flour a flat surface.
Knead the dough 7 minutes or until the dough become smooth and elastic.
Butter a large bowl on the bottom and up the sides.
Place the dough into the buttered bowl turning to cover with the butter on all sides.
Cover the bowl and allow the dough to rise double in size about 1 hour.
Punch the dough down with your fist.
Very lightly flour the flat surface again.
Place the dough on the floured surface and divided into four sections.
Shape each section of dough into an 18 in long rope.
Grease a cookie sheet and place the ropes parallel on the sheet.
Start with the right rope and braid the dough ropes together.
The first rope should go over the second rope, under the third rope and over the fourth rope.
Continue always beginning on the right side until the ropes are completely braided together then pinch the ends to seal.
Cover the dough with a damp kitchen towel and allow the dough to rise 45 minutes or until double in size.
Heat the oven temperature to 350 degrees.
Place the egg yolk, cold water and cinnamon into a small mixing bowl and whisk to completely combine.
Brush the dough with the egg yolk mixture.
Bake the Bread 22 minutes or a golden brown.
Cool the bread on a wire rack before cutting.

Serving Size: 1 loaf

Making bread isn’t really that difficult. Being sure to completely dissolve the yeast, kneading the bread until it becomes elastic and making sure you allow the bread to rise as directed will insure that you have the perfect bread every time.

If you don’t know my now I love chocolate of any kind. Last year I discovered an easier way to make my favorite chocolate treats, with this stuff called Almond Bark at first I thought I want a chocolate flavor not an almond flavor, to my surprise it does not taste like Almonds at all. This discovery got my ideas starting and things turning in my head wanting to create more treats.

To make this it does take a little time with each pretzel but other then that it is fairly easy.

Ingredients

Chocolate flavored Almond Bark

Vanilla Flavored Almond Bark (optional used just for top drizzle)

Pretzels Any shape is fine my daughter wanted to use the tiny classic ones

Peanuts

(there are sprinkles in the picture, My daughter wanted to try to add them but with the chocolate you can’t see them, The ball sprinkles are visible if you want to add those)

Supplies Needed

Microwave Bowl

Wax paper

Mixing spoon

Fork

How to do it

Place the chocolate almond bark in bowl. I use 6 squares which is half you can do the whole pack if you prefer. Pop in microwave for 90 Seconds then Mix, These will Not look like they are melting so you have to stir it to make it smooth. Pop back in to the microwave and mix every 20 to 30 seconds. The almond bark does not get really hot it does get warm so your looking for no more lumps rather then a temperature.

After it is smooth drop a a few pretzels in to the bowl take the fork cover then then scoop it out then tap on the side of the bowl to let any access off. Place on wax paper and repeat. See super easy like I said this is the ‘hard’ part more time consuming then hard. I Usually do about a total of two handfuls.

After the handfuls are done there is still some left in the bowl, Pop it back in the microwave for about 20 seconds to loosen it up a little. Drop a handful or so of peanuts in there and mix add more if it is to chocolaty. Take a small spoon and scoop them out place on wax paper.

For the topping if you choose to do it, melt one square when it is smoothed take a clean fork dip it then drizzle it over the pretzels.

These do not take very long to set so enjoying these yummy treats isn’t something you have to really wait for. These are super easy and safe to make with your kiddos it does get a little messier with kiddo help but it is fun.

I hope you enjoy these as much as I do
