I found it being a great escape from life. Well as becoming a parent I lost that love, between taking care of the kids and the keeping the house.

Back in Oct a friend on Facebook said she just read a really good book it sparked my interest, So I was going to visit my mom figured it would be a great time to try reading something new. Well that book was Leah’s Choice: Pleasant Valley Book One Well this book is amazing I ended up reading the next two books in the series with in a week or so. Since then I have been reading about 2-3 books a week. Most are the Amish romances I didn’t realize how much missed reading so much.

Along with my love of reading back, it has also made me want to go and do more baking, crafting and leading a more simple life. This has in turned made life with the kids so much easier and happier. I am not sure if its because that was missing is now back or if because I see these women doing these things that I can do, and I do them which also helps relax me. I am not totally sure but I know that what ever the reason life in the Wilson house has begin to turn and get better.

Is there something that you use to do that you stopped doing for what ever reason?

For most of us Jan 1st is like a  new beginning. I am hoping this holds true for our family. I have new plans for us and ideas to get through the year. I will be posting my Road Map 2011 in a few days I am working on where I want to ‘stop’ this year.

One thing I am doing is the Bloggy Moms Blog Dare, which is simply posting every day.  As many of you know that is a hard thing for me at times. So I am going to start with it being the first thing I do after the kids go to school. I am so excited and dedicated to doing this dare this year.

A couple of days ago my son Jeffery brought home three huge zucchinis. I usually only buy them when a recipe calls for it and its usually a small one that you usually get from the store. First thought was zucchini bread, never have made it or even tasted it, I figured it was worth a try. I asked on facebook got no one who knew so I hit my swagbucks toolbar. I found a few then came across the one on the Food Network website it is for Chocolate Chip Zucchini Bread sounded good. Off to the kitchen I went and this is what came out.I didn’t care for it all that much, I like the bites with out the chocolate chips for me it just didn’t add anything to it.

With a ton of the zucchini shredded I was on the hunt for something else to make with these. Back to the search I went I came across different things like soups, stews and grilled nothing that needed shredded. I then came across Squash and Zucchini Cakes they sounded pretty good. I did have to substitute the yellow squash for spaghetti squash and the Vidalia onion for yellow onion. I also made them a little thinner then they say in the recipe. Turned out pretty good even my picky eaters ate it right up.

I am still looking for more since i still have two more huge ones left. Do you have any other ideas?

Anyways this is Beckys little thumb stuck in the ball Yes I am sure she would have preferred me help out but she just looks so cute. She did get it out right after the camera took the picture, her thumb is fine and she won that round :)
