Menu Plan Monday

Happy Monday to everyone. Well here we are another beautiful, foggy Monday here in Washington. there is really no telling how this week is going to be weather wise, I really hate it when its like this it makes it hard to plan meals. At least for me it is.

This week since DH is off not sure how much we will stick to the plan, since normally he takes over when he is off to help me take some time off too. We shall see how this goes. I am sharing links to Mom’s a Gourmet my recipe site where I share some of my favorite recipes to help me find and share them easily :) Especially the soups since I don’t make them to often.

Monday – Pulled Pork Sandwiches Oven baked sweet potato fries Fresh veggies (or steamed if they aren’t looking to hot at the market)

Tuesday – Fried Chicken, Masked potatoes, with green beans. (I don’t fry fry my chicken, I cook it in the crockpot then lightly coat and fry it just long enough for a crunch on the outside)

Wednesday - Thickened Meatball Soup

Thursday -Orange Glazed Pork Tenderloin*, rice and steamed veggies

Friday – Golden Winter Seafood Chowder

Saturday – “Left over day” Basically soup and salad for dinner.

Sunday – Roast potatoes and veggies.

Orange Glazed Pork Tenderloin (LOW FAT)

Ingredients:

  • 1 pork tenderloin — (approx 8-ounce)
  • 1/4 teaspoon coarsely ground pepper
  • 1/3 cup orange marmalade
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic — minced
  • favorite cooking spray
  • Fresh mint sprigs

Instructions:

  1. Trim any fat from tenderloin. Cut into two pieces. Cut a lengthwise slit down each piece, about 2/3 of the way through and then flatten.
  2. Spritz tenderloin with cooking spray and then sprinkle tenderloin with ground pepper to your liking.
  3. Combine marmalade, fresh mint, soy sauce, and garlic. Place tenderloins in roasting pan and pour marmalade mixture over top and spread out evenly.
  4. Bake at 350 degrees F for 35 minutes or until juices run clear.
  5. Garnish with mint springs at serving time.
