Meal Planning Monday Jan 28 Well a new week its nicer outside I hope it lasts.

Monday Chicken Fried Steak and Potatoes (Yes I know not overly healthy)
Tuesday baked Chicken Probably Mac and Cheese its the house favorite right now
Wed Baked Pork chops with noodles
Thursday Tacos (easy night Boys are back in scouts)
Friday Roast
Saturday Night OFF DH has to cook or take me out
Sunday, Our Easter Dinner, Ham scalloped potatoes, veggie tray, deviled eggs, Stuffing.

We decided to not do the Easter Meal yesterday because Ned had to work swing shift he leaves about 1pm then gets home about 1am, I didn’t want him to have to miss a big family meal, Plus I don’t think I can do family meals like that with out my mom if he isn’t here. I am use to him working holidays but usually Mom is right here to celebrate with me.

    I do understand not wanting to do the ‘do’ if family isn’t there to help you celebrate. We have been there in years past and have prepared spring-time meals of Veal Picatta with lemon sauce and asperagus. Lamb and asperagus just say Spring to me. My husband and I both enjoy working in the kitchen so it is a family time just preparing the family meal.

    We did have ham for our Easter dinner this year so I have several options to use ham since I have leftover ham from our Easter dinner. The recipes are Ham and Potatoes Au Gratin, Eggs Bennedict, Ham and Potato Soup, and Mediterranean Vegetable Salad with Ham. All are delicious and different so your family won’t say “Oh, no!
